Persimmon & Apple Chia Seed Jam

Ditch the jam made with 50% refined sugar and try this healthier alternative instead. You will find only 1 teaspoon of unrefined sugar has been added to this delicious spread.

Although this is persimmon and apple flavoured, feel free to play with the flavours and use nearly any fruit or berry. You just need to cook and puree it.


Chia seeds are nutrient dense and add a source of healthy omega 3 fatty acids. They are also what makes the jam naturally gel together.


Although chia seeds jams are still a sweet treat, they are a much better alternative to store bought jams. Plus they are super super easy to make.


One down side is that it will only last in the refrigerator for around one week. So to get around this you could freeze portions of it and pull it out at the start of the week.

Serve on your favourite bread, cracker or even apple slices. In the photo below I've smeared it on coconut bread.


RECIPE

Ingredients:

2 ripe persimmons peeled and finely chopped

1 apple, peeled and finely chopped (optional)

3/4 C filtered water

1/2 t cinnamon


Instructions:

1. Place the finely chopped persimmons and apple in a small saucepan with the water.

Boil over a medium heat until both are soft.

2. Add in cinnamon and maple syrup and stir to combine.

3. Using a stick blender, puree the mix until smooth or until the desired consistency is achieved.

4. Add the chia seeds and stir until combined.

5. Place the jam in a container and store in the refrigerator. It will continue to gel in the fridge for around a few hours after.
