Are you ready to elevate your breakfast game? Look no further than our mouthwatering Banana Oat & Berry Bake recipe! Whether you're hosting a brunch for friends or simply want a wholesome breakfast with minimal cleanup, this recipe has you covered. The best part? It's all made in one ceramic baking dish, making it a breeze to prepare. Plus it is a great egg-free and dairy-free option. If you use gluten-free organic oats it can even be suitable for those on a gluten free diet.

Let's dive into this delightful and nutritious creation:

  • 2 ripe bananas

  • 2 cups rolled oats

  • 2 tablespoons chia seeds

  • 2 cups unsweetened almond or oat milk

  • 2 cups frozen mixed berries

  • ½ teaspoon cinnamon

  • 1 tablespoon maple syrup (plus extra if needed)

  • Zest of half a lemon

  • Coconut threads

  1. Start by preheating your oven to 180°C / 350°F. Lightly coat an 8×11 baking dish with oil to prevent any sticking.

  2. In the baking dish, use a fork to mash the ripe bananas. Add the rolled oats, followed by the chia seeds, cinnamon, maple syrup, and milk. Give it a good stir to combine all these wholesome ingredients.

  3. Next, add the frozen mixed berries on top of your oat mixture. For that extra touch of flavor and texture, sprinkle coconut threads and lemon zest.

  4. Pop your creation into the preheated oven and let it bake until the liquid is absorbed, approximately 25 minutes.

  5. Once it's out of the oven, serve it piping hot! You can further enhance the experience by adding toppings like Greek or coconut yogurt, nuts, and seeds.

Enjoy this scrumptious breakfast treat, which is not only delicious but also egg-free! Kickstart your day with a burst of flavor and energy! 😋
